Ingredients :

  • 4 oz dried flat rice noodles (soaked in room temperature water for 60 minutes)
  • 8 large shrimp, peeled and deveined
  • 1/4 cup firm tofu, cut into small batons
  • 2 tbsp vegetable oil
  • 1 tbsp minced garlic
  • 1 tbsp minced shallot
  • 1 tbsp preserved radish, finely chopped
  • 2 large eggs
  • 1 cup fresh bean sprouts
  • 1/2 cup garlic chives, cut into 2-inch pieces
  • 1/4 cup crushed roasted peanuts
  • 1 lime wedge
  • 3 tbsp tamarind concentrate
  • 3 tbsp fish sauce
  • 3 tbsp palm sugar, finely shaved
  • 1/2 tsp red chili flakes

Method :

1. Whisk tamarind concentrate, fish sauce, palm sugar, and chili flakes in a small bowl until the sugar is fully dissolved.
2. Heat oil in a wok over high heat; sear the shrimp until pink and just cooked through, then remove and set aside.
3. Add tofu, radish, garlic, and shallot to the same wok; stir-fry for 1 minute until fragrant.
4. Add the drained noodles and the prepared sauce mixture; toss continuously until the noodles absorb the liquid and soften.
5. Push the noodle mixture to one side of the wok; crack eggs into the center and scramble until lightly set.
6. Fold the eggs into the noodles and add bean sprouts and garlic chives.
7. Toss everything together for 30 seconds until the vegetables are slightly wilted.
8. Plate immediately and garnish with crushed peanuts and a fresh lime wedge.

Recipe Notes :

Do not over-soak the noodles; they should be flexible but still firm to the bite before hitting the wok. Use high heat throughout the process to prevent the noodles from becoming mushy.

Frequently Asked Questions

How do I prevent my Pad Thai noodles from becoming mushy?

To avoid mushy noodles, soak the dried rice noodles in room temperature water for 60 minutes until they are flexible but firm. Never boil them before stir-frying.

What is a good substitute for tamarind concentrate?

While tamarind is essential for authentic flavor, you can use a combination of lime juice and a splash of rice vinegar as a temporary substitute if needed.

Can I make this recipe vegetarian?

Yes, replace the shrimp with extra firm tofu and substitute fish sauce with an equal amount of high-quality light soy sauce or vegetarian stir-fry sauce.
